Gingerbread Cookies

Magic Ingredient: Cinnamon

I made this a little while ago and have been too lazy to post the recipe. For my cinnamon recipe, I made gingerbread cookies!

I followed the recipe and they turned out well. My molasses wasn’t specifically “light”, I couldn’t find it in safeway. Thankfully, I don’t think it made a difference.

Ingredients

  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 1/2 teaspoons ground cinnamon
  • 1 1/2 teaspoons ground ginger
  • 3/4 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 1 cup butter or margarine
  • 1 1/2 cups packed brown sugar
  • 1 large egg
  • 1/3 cup light molasses

Directions

  1. PREHEAT oven to 350 degrees F.
  2. COMBINE flour, baking soda, cinnamon, ginger, cloves and salt in small bowl.
  3. BEAT butter, sugar, egg and molasses in large mixer bowl until creamy. Gradually beat in flour mixture until well blended. Stir in morsels. Drop by rounded tablespoon onto ungreased baking sheets.
  4. BAKE for 9 to 11 minutes or until cookies are lightly browned. Cool on baking sheets for 2 minutes; remove to wire racks to cool completely.

Monkey Bread

Magic Ingredient: Cinnamon

Today I made Monkey Bread, something that I’ve been reading about everywhere but never had or made before. Apparently it’s so well known that Pillsbury sells 4-packs of biscuit cans with their Monkey Bread recipe on the back. This recipe came out wonderful–not too sweet or sugary and deliciously sticky.

Ingredients:

  • 4 cans of biscuit
  • 1 cup brown sugar
  • 1- 1.5 cups butter
  • 1/2 cup  sugar
  • 2 tbsps cinnamon

Directions:

  1. Preheat oven to 350F. Grease a bundt pan well. (I didn’t have one, so I used a loaf pan instead. Worked out fine!) Combine the white sugar and cinnamon in a ziploc bag. Open and separate your can of biscuits. Cut them into halves and roll each half into balls of dough. Shake them in the ziploc bag to coat, then layer them in the pan. Do not be fooled! These little dough balls look small but puff up a lot in the oven! So if you are using a tiny pan and it’s already getting full, you might want to find something bigger.
  2. Heat the stick of butter and brown sugar in a pan over medium heat. Mix well and boil for 1 min. Pour over the dough balls in the pan.
  3. Bake 45min @ 350F. Let it cool for 10min then flip onto a large plate. If you want more sauce, combine a stick of butter and the remaining white sugar+ cinnamon mix in a pan and pour on top.
